Halloween is fun for lots of reasons, but the candy, costumes, pumpkins and pumpkin seeds are such a nostalgic way to bring in a new holiday season! I found a short, little pumpkin at trader joes and knew I had to bring him home to carve and roast pumpkin seeds inside!
Roasted pumpkin seeds are so easy to make and they are really good for you! They have great nutrients like iron, magnesium, vitamin E, vitamin K and some even call them a superfood! I just really like the way they taste!
Carve off the top of your pumpkin and scoop out the pumpkin seeds. Put the seeds and the goop in a strainer. Wash them thoroughly, give them a good shake in the sink and then add them to a mixing bowl. Give them a swirl of olive oil and then a big dash of salt. That's how you make "original" pumpkin seeds, but I wanted to try something new, so for the second flavor, I added a little bit of cayenne pepper and then blackened cajun seasonings! You can use anything in your cabinet--have fun! If i had gotten more pumpkin seeds out of my pumpkin I would have definitely done more flavors. Lay the pumpkin seeds out on the baking sheet and cook at 300 degrees for 45 minutes. I didn't stir mine and they turned out just fine. I was too distracted in carving my pumpkin. It's not the most unique carving, but I thought simple was cute! After the pumpkin seeds bake for 45 minutes, take them out, let them cool and then enjoy!
